Fruit Filled Crepes Recipe

I don't know about you, but my family LOVES to eat crepes.  This my friends is seriously the Easiest, and the best recipe EVER! Their absolute favorite way to eat them is filled with whatever fruit we have on hand. Today it just happened to be strawberry's, pomegranates, and mango's.  Of course we have to top it all off with some whipping cream!

 I LOVE crepes.  They are one of my favorite foods.  Sadly my husband does not join in that love. His loss....my gain!

I love to make me a couple of crepes and stuff them with whatever fruit we have available that day.

Heres the recipes:

Crepes Recipe

1 c flour
2 eggs
1 c milk
1/4 tsp salt
1 tsp vanilla
Simple and quick crepe recipe
Mix all the ingredients together in a blender.  Heat up your non stick pan on the stove.  When the pan is hot then spray it with butter spray and pour enough of the liquid into the pan to barely cover the bottom.  I love my crepes to be really thin.  The problem with that is they are harder to flip.

When the ones side of the crepe is turned slightly brown then flip it over and cook the other side.

Then fill with whatever fruit you have on hand.  I also like to pour a little coconut syrup onto my crepes.  Super delicious! (that recipe will come soon)

Enjoy!  This recipe makes about 6 crepes.

For a healthier version (which I often do) I replace the milk with the 30 calorie almond milk; and the flour with either whole wheat or spelt flour.
