15 Minute Personal Pizzas

Pizza is a staple at our house.  And no I don't mean the "call the guy up and deliver kind"  We live a little too far out of town for them to want to deliver to us.  Besides, that takes all the fun out of making out own creation.

Plus, we are a bit picky when it comes to pizza.  About our toppings I mean. None of us like the traditional tomato sauce on our pizza so we always use ranch or ceasar dressing instead.  Its supper delicious.  Promise! Me and miss Smarty Pants (she's 6) love us some hawaiian.  The hubby HATES fruit of any kind cooked.  Plus he is a carnivore so the more meat the better for him.  Our little princess (she's 3) doesn't like things mixed so she is going to pick off whatever toppings are eat them all separately.  Some days she likes them all and some days she doesn't like anything.

 So normally I make 1 cookie sheet size pizza and 1/2 of it is hawaiian, the other half has everything but the kitchen sink on it.  This whole process normally takes me about an hour by the time I make the dough, let it rise, then gathering the toppings and cooking some of them (like some bacon or sausage) and finally our pizza is in the oven.

The other day I opened the fridge like I always do around 6 pm and wonder what in the world am I making today, I saw some refrigerated biscuits.  Perfect...I have all the toppings for pizza, plus the girls would LOVE to make their own.  So off we went.  15 minutes later the mini pizzas were in the oven.  The best part?  They cooked in 10 minutes instead of the normal 15-20.  Even better!

15 Minute Pizzas (makes 8 mini pizzas)

1 package of refrigerated biscuits (we used the grand style)
pizza toppings - some of the toppings we like canadian bacon, pepperoni, sausage, bacon, taco meat, ranch dressing or ceasar dressing instead of tomato sauce, pineapple, olives, mushrooms, and of course lots of cheese (and no we don't put them all on at the same time, a combination of some of them.  Be creative and see what toppings you have that would be yummy)
15 Minute personal pizzas from refrigerated biscuit dough

Roll out the biscuits until they are nice and flat.  Put about 1 tbsp of your choice of sauce all over the biscuit.  Then start layering your toppings.  Bake at 350 for 8-10 minutes. Then top with cheese and let that melt.
