How to Make Vanilla using Vodka using Vanilla Beans (Grade A of Grade B)

Vanilla is one of the most versatile flavors and can be used in a variety of desserts and dishes. While vanilla extract is commonly used in baking, making your own vanilla extract using vodka and vanilla beans is a fun and easy DIY project that can also save you money in the long run.

Here's how to make vanilla using vodka and vanilla beans:

Instructions:

  1. Choose high-quality vanilla beans. Look for plump and oily beans that are flexible and have a strong, sweet aroma. You can find vanilla beans at most specialty food stores, as well as online.

  2. Cut the vanilla beans in half lengthwise using a sharp knife. Use the tip of the knife to scrape out the tiny seeds from the inside of the bean.

  3. Place the vanilla beans and seeds into a clean glass jar with a tight-fitting lid.

  4. Pour the vodka over the vanilla beans until they are fully covered.

  5. Give the jar a good shake to mix the vodka and vanilla beans.

  6. Store the jar in a cool, dark place for at least 8 weeks, shaking it every few days. The longer you let it sit, the stronger the vanilla flavor will be.

  7. After 8 weeks, strain the vanilla extract through cheesecloth or a coffee filter to remove any small particles or debris.

Tips:

  • You can reuse the vanilla beans to make a second batch of vanilla extract by simply adding more vodka to the jar and letting it sit for another 8 weeks. I have done this several times and just keep adding more vodka and letting it sit until it is a dark rich brown. 


 

  • You can also experiment with different types of alcohol, such as bourbon or rum, to create different flavors of vanilla extract.
  • Make sure to label your vanilla extract bottle with the date it was made, so you know when it's time to make a new batch.
  • In the jar above: the large uncut vanilla bean is a grade A. Just split it down the center and add to jar. The diced up ones at the bottom are grade B. Not sure why, but the oh so powerful internet told me to do them that way. So that is what I did. Right, Wrong, or Indifferent. But the Vanilla is full of taste so it worked regardless.

4th of July Sugar Cookie Bars Recipe

For the 4th of July I made this cute little 4th of July Sugar Cookie Bars. They were a huge hit at the 2 different BBQ's that we took it (PS I didn't take the same pan to both places ;)


4th of July Sugar Cookie Bars
Ingredients: 
1/2cup unsalted butter
1 cup sugar
2 large eggs
1 teaspoon vanilla
2 1/2 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking powder

 Cream layer:
1 8 oz bar of cream cheese softened
1 cup powdered sugar
1 teaspoon vanilla
1 Large Tub of Frozen Whip Topping or 1 pint of Heavy Whipping Cream Whipped
1 lb of fresh Strawberries
1 pint of fresh blueberries

Cream butter, sugar, and eggs. Mix in vanilla. with salt and baking powder.  Then slowly add in the flour until the dough separates from the edge of your bowl (I like to use my +NutriMill Bosch Mixers , but doing it in a regular bowl or in a +KitchenAid will also work great)
  
Press the dough in a cookie sheet (like the one pictured).  You might want to spray your hands (and wash them as my mom would STILL remind me.  lol) with some non-stick butter type spray (I like +PAM Cooking Spray personally)
Bake at 375 degrees for 10 minutes or until done.

For the topping: mix the cream cheese, powedered sugar, and vanilla in a bowl, beating until smooth.  Then fold in your whipped cream/whipped topping.  

Spread that over the top of your cooled down bars.  Refrigerate if you won't be using immediately.   Then right before you serve the bars place your fruit in whatever design you desire (I did the American Flag)  

Quick note: I like more topping than bars when I make this recipe, if you think you would like more cookie and less topping ratio then double the bar recipe.

The Best Grape Salad Ever

I was introduced to this salad by my mom a couple years ago. And now (thanks to her) I crave this salad year round! 

Thankfully, Fred Meyer had grapes for $.99 this week (that is super cheap in these parts!).  So I bought myself a few bags and skipped the whole way hope.  

The Best Grape Salad Ever by A Vision to Remember

First you will need to take all the grapes off the vine.  I used 3 lbs.  Wash and dry
Whipping Cream all fluffed up for Grape Salad
Whip up some whipping cream (or use the store bought stuff)

Make a yummy mixture of 1 package of cream cheese (8 ounces) with 1/2 cup sugar, and 1 tsp vanilla all together.  Then fold in the whipping cream into the cream cheese mixture.
Chopped Pecans
Chop some pecans
combine grapes with whipping cream
And stir it all together.

Top with a few nuts and you have the best grape salad on the planet. No joke!
How to make a delicious grape dessert for parties
Recipe:
3-4 lbs grapes
1 quart whipping cream whipped (or a large tub of cool whip, I prefer the good stuff)
1/2-1 cup of chopped pecans (depending on how many you like)
1 8 ounce package cream cheese
1/2 cup sugar
1 tsp vanilla

Combine the sugar, vanilla, and cream cheese.  Whip whipping cream and then fold into the cream cheese mixture.  Combine all the remaining ingredients with the whipping cream mixture.  Chill for 1 hour.

Mango Delight

mango, vanilla pudding, jello, whipping cream, graham cracker crust, delicious mango dessert, quick and easy

In our Bountiful Basket we got a few really large mangos. I had not decided what I would do with them yet. We are going to a block party tonight and need to take a salad and that is when I cam up with the perfect solution:

Mango Delight
1 large package of vanilla pudding, prepared (but not set yet)
2 large mangos, diced
1 pint whipping cream whipped (or you can use cool whip)
1 cup crushed graham crackers (you could also use a graham cracker pie crust
3 tablespoons butter melted

Put your graham crackers and butter in the bottom of your pan (save a tablespoon or so of the graham crackers to put on the top of your dessert). Mix it all together squish to the bottom to make your crust. Then add your diced mangos on top of the graham crackers. Then spread the pudding over your mangos. Finally spread the whipping cream over the top of your pudding and sprinkle the remaining graham crackers over the top. Refrigerate until set and serve

This is a really delicious and quick dessert. My daughter and I made our own little bowl to try before we assembled it all together and we could not stop eating it. Plus I am not a fan of mangos but this is really yummy.

Strawberry French Toast with Coconut Syrup

If you haven't noticed lately, but I am a little obsessed with flavor bread for french toast.  Its one of my family's favorite breakfast.  Especially if it includes whipping cream and fresh fruit.

So today, we tried a bread from Franz called Strawberry Shortcake.  It smelled DI-VINE!  Of course me and my cheap wallet got the bread at the Franz day old bread store.  I did look in our local Fred Meyer and they had the bread too, it was $1 more, but they had it.





Recipe :
1 loaf of Strawberry flavored bread (I personally prefer to use bread that has yeast, it seems to hold together better)
5 eggs
1/2 c almond milk (or regular milk)
1 tsp vanilla extract
Fresh Strawberries
Coconut Syrup (Go HERE for the recipe)
Whipping Cream (from a can or the real stuff)

1. Mix the eggs, milk, and vanilla together.  Beat the eggs really well.
2. Dip each bread slice into your mixture.  Make sure to coat each side well, then place on a griddle.
3. Cook on both sides until light brown
4.  Serve french toast warm with fresh cut strawberries, syrup and whipping cream

Coconut Cookies

Today I am going to share with you how to make some delicious cookies. These were one of my favorites growing up. The other day I asked my mom for the recipe and made myself a batch.

Let me just say that they are A--MA-ZING
Coconut Cookies
1/2 cup butter
2 cups sugar
2 egg whites
3 tsp vanilla
2 Tbsp Karo Syrup
3 tsp baking powder
1/2 tsp salt
3 cups flour
3 cups coconut
1 cup white chocolate chips


Cream butter, sugar, and eggs. Add karo syrup, vanilla. Add baking powder, salt and flour. Fold in coconut and white chocolate chips. Bake at 350 till golden brown.


The chocolate chips were not original to this recipe...they are my little surprise. I love the combination of coconut and white chocolate. Another note is that this batter is really crumbly. I think when I make it next time I will only add 2 1/2 cups flour, but I have not tried it yet so I don't know how it will work for sure.

Butter Cream Frosting

Remember my daughters cake from the other day.  Here is the recipe for the butter cream frosting. 

Buttercream Frosting Recipe for Birthday Cake

I frosted underneath all the fondant and all the decoration on the castle with butter cream frosting.  It was really easy to make.  



Butter Cream Frosting
1/2 c shortening
1 drop butter flavoring
1 tsp vanilla
1 lb powdered sugar
1/4 c water

Mix the shortening, butter flavoring, and vanilla together with mixer of your choice (large batches-Bosch mixer all the way, small batches hand mixer for sure!).  Then slowly add the powdered sugar and water until you get the consistency of whipped butter and whipping cream together.   It will be nice and fluffy.  You can add coloring to it as desired.

How to Make Frozen Cookie Dough. It's the Simplest Way to have Fresh Cookies. No Joke

I love the cookies. Well.  At least most cookies.  I have 2 favorites.  Well, 3 technically.  The first is the cookie that I don't have to make.....

Ok.  Just Kidding.  Kinda.

Another one that I love are the Sugarhouse Cookies. They are Amazing!  I can't buy them, or I eat them all.  They are for sure my favorite ones out there that are store bought.  Along the same lines, there is a bakery local to me called Cocoa Bean.  They have ginourmous sugar cookies.  To say that I am in love....is an understatement.

I can't buy either cookie cause I horde them and don't share and I eat them ALL... Every. Single. One.

All By Myself.  {selfish much?!?}


 My 2nd favorite cookie are Chocolate Chip Oatmeal Cookies.  I love them.....like a lot.

How to Make Frozen Cookie Dough by A Vision to Remember

Almond White Chocolate Rolls with White Chocolate Frosting

Lucky me...my sister decided to make cinnamon rolls and orange rolls the other day.  Then I came up with a little idea for a new kinda roll...I love white chocolate, almonds, and craisins so what better than to try and combine these ingredients.  They were delicious!  We also added a little coconut to them.  Thankfully, my sister let me try them out with only 6 rolls.  Lets just say my butt might have grown a few inches if I had made any more!

Recipe:
Your favorite cinnamon roll bread mine is
1 quart hot water
1 1/3 c sugar
2 Tbsp salt
2/3 c shortening
7 c flour
2/3 c dry milk
4 Tbsp yeast dissolved in 2/3 c warm water
3-4 c more flour

mix first 6 ingredients.  Add yeast mixture, mix well, then add last flour.  Beat well.  Let rise 30 minutes.  Using one half of the dough roll out on floured table. This recipe makes around 36-40 large rolls. Place on pan.   Let rise, then bake at 350 for 20 minutes. 

Almond, White Chocolate Rolls with White Chocolate frosting:
1/4 c butter softened
1 c chopped almonds
1/2 c white chocolate chips chopped
1 c coconut
1/2 c craisins

Spread softened butter on rolled out dough.  Then sprinkle the remaining ingredients onto dough.  Roll and cut with either floss or thread.  You can cut the roll by sliding the thread under the roll and then crossing it at the top.  Pull tight and it should cut roll. 

White Chocolate Frosting
1 c melted white chocolate chips
1 tsp vanilla extract
1/4 c butter softenend
powdered sugar

mix all the ingredients together.  I never know exactly how much powdered sugar I need I just dump and mix until I get the right consistency.  If you end up making it too powdery just add a little milk to cream it up again.  Make sure to frost the rolls when they are good and hot.  It is best to have this frosting on the thinner side so that it will spread easily once the chocolate cools and thickens the mixture a bit. 

Zucchini Bread


I LOVE Zucchini bread. So do my girls. Even my baby luvs it for her snack in the afternoon.

This recipe with make 2 loaves:


Zucchini Bread

3 eggs 1 c oil
2 c sugar 3 c flour
2 c peeled and grated 1 tsp baking soda
zucchini 1 tsp salt
2 tsp cinnamon 3 tsp vanilla
Mix together. Bake at 350 for 1 hour.


Homemade Microwave Caramel Popcorn Recipe-Simple and Quick

I don't know about you, but I L-O-V-E Caramel Popcorn.  Its gooey, its delicious, plus popcorn is healthy for you. Right?!?  Today, I am going to share with you my family's secret recipe for The Yummiest Caramel Popcorn Around!





Straight from the Super Secret Family Recipe Book:



Microwave Caramel Popcorn:
2 C Brown Sugar
1 Cube Butter (1/2 cup)
2/3 C Condensed Milk (I always just use the whole can.  I never measure it)
1/2 C Karo Syrup
Pinch of Salt

Mix those ingredients in a microwave safe bowl.  Cook in microwave for 5 minutes.  Stir.  Then add 1 TSP vanilla extract, cook for another 5 minutes in the microwave.

Pour over a large bowl of popcorn.  I normally do 3 batches of air popped popcorn.  If you want it extra gooey, then do 2 batches.

Fruit Filled Crepes Recipe

I don't know about you, but my family LOVES to eat crepes.  This my friends is seriously the Easiest, and the best recipe EVER! Their absolute favorite way to eat them is filled with whatever fruit we have on hand. Today it just happened to be strawberry's, pomegranates, and mango's.  Of course we have to top it all off with some whipping cream!

This is a recipe that a friend shared with me a long time ago.  Making my own Fondant has been lots of fun, especially when I had a couple friends ask me to help make their wedding Cakes.  Sadly, I haven't had much time lately to make any cakes, and I don't think I will ever make a cake for a wedding again.  It is so stressful making sure to make it just right!
