How to Make Vanilla using Vodka using Vanilla Beans (Grade A of Grade B)

Vanilla is one of the most versatile flavors and can be used in a variety of desserts and dishes. While vanilla extract is commonly used in baking, making your own vanilla extract using vodka and vanilla beans is a fun and easy DIY project that can also save you money in the long run.

Here's how to make vanilla using vodka and vanilla beans:

Instructions:

  1. Choose high-quality vanilla beans. Look for plump and oily beans that are flexible and have a strong, sweet aroma. You can find vanilla beans at most specialty food stores, as well as online.

  2. Cut the vanilla beans in half lengthwise using a sharp knife. Use the tip of the knife to scrape out the tiny seeds from the inside of the bean.

  3. Place the vanilla beans and seeds into a clean glass jar with a tight-fitting lid.

  4. Pour the vodka over the vanilla beans until they are fully covered.

  5. Give the jar a good shake to mix the vodka and vanilla beans.

  6. Store the jar in a cool, dark place for at least 8 weeks, shaking it every few days. The longer you let it sit, the stronger the vanilla flavor will be.

  7. After 8 weeks, strain the vanilla extract through cheesecloth or a coffee filter to remove any small particles or debris.

Tips:

  • You can reuse the vanilla beans to make a second batch of vanilla extract by simply adding more vodka to the jar and letting it sit for another 8 weeks. I have done this several times and just keep adding more vodka and letting it sit until it is a dark rich brown. 


 

  • You can also experiment with different types of alcohol, such as bourbon or rum, to create different flavors of vanilla extract.
  • Make sure to label your vanilla extract bottle with the date it was made, so you know when it's time to make a new batch.
  • In the jar above: the large uncut vanilla bean is a grade A. Just split it down the center and add to jar. The diced up ones at the bottom are grade B. Not sure why, but the oh so powerful internet told me to do them that way. So that is what I did. Right, Wrong, or Indifferent. But the Vanilla is full of taste so it worked regardless.

They are Amazing!  I can't buy them, or I eat them all.  They are for sure my favorite ones out there that are store bought.  Along the same lines, there is a bakery local to me called Cocoa Bean.  They have ginourmous sugar cookies.  To say that I am in love....is an understatement.

I can't buy either cookie cause I horde them and don't share and I eat them ALL... Every. Single. One.

One of my favorite things to do with the kids is to cook.  It doesn't matter if we are baking a delicious treat, making dinner, or even just making breakfast...we all seem to enjoy gathering in the kitchen and making something together.  That is where home is for me.

The problem is that most of the time when we decide we want to make some treat....we don't have a lot of time.

This recipe is one of our family go to recipes...we change it up each time.  Sometimes its chocolate, sometimes its funfetti, and sometimes its boring ol white cake flavor.  But every time we make this treat, we enjoy every minute of it together.  Plus they are delicious! 



The Best Grape Salad Ever

I was introduced to this salad by my mom a couple years ago. And now (thanks to her) I crave this salad year round! 

Thankfully, Fred Meyer had grapes for $.99 this week (that is super cheap in these parts!).  So I bought myself a few bags and skipped the whole way hope.

First you will need to take all the grapes off the vine.  I used 3 lbs.  Wash and dry
Whipping Cream all fluffed up for Grape Salad
Whip up some whipping cream (or use the store bought stuff)

Make a yummy mixture of 1 package of cream cheese (8 ounces) with 1/2 cup sugar, and 1 tsp vanilla all together.  Then fold in the whipping cream into the cream cheese mixture.
Chopped Pecans
Chop some pecans
combine grapes with whipping cream
And stir it all together.

Top with a few nuts and you have the best grape salad on the planet. No joke!
How to make a delicious grape dessert for parties
Recipe:
3-4 lbs grapes
1 quart whipping cream whipped (or a large tub of cool whip, I prefer the good stuff)
1/2-1 cup of chopped pecans (depending on how many you like)
1 8 ounce package cream cheese
1/2 cup sugar
1 tsp vanilla

Combine the sugar, vanilla, and cream cheese.  Whip whipping cream and then fold into the cream cheese mixture.  Combine all the remaining ingredients with the whipping cream mixture.  Chill for 1 hour.

Candy Bar Popcorn-Double Chocolate Lovers

I love Popcorn! It is delicious is so many different ways. Sweet.  Salty. Butter.  Whatever pretty much works!

We are still suffering from post-Halloween Candyitis. We are overloaded. Plus, I needed a treat to take to a friends house the other night. Kill 2 birds, 1 stone. I didn't have a lot of time to make something big and elaborate.

This yummy Candy Bar Popcorn drizzled in white chocolate was perfect.  It was quick.  It was simple.  It was a huge hit with the kids.  A triple hitter!

The recipe:
1 bag white chocolate chips
2 Tbsp oil
1 large bowl of popped popcorn (I used my air popper, but microwave popcorn would work well too)
10-20 small candy bar candy's. ( I used M&M's, Twix, Reeces, Snickers, Whoppers, and Almond Hershey Bars

Melt the white chocolate chips however you want.  I melted them in microwave for about 60 seconds and then stirred until the chips were melted.  It was still a little thick to be drizzled over the popcorn so I added the oil to thin it out.

Drizzle it over your popped popcorn.  Then mix in your chopped candy's.  Let the chocolate set and serve.

Homemade Microwave Caramel Popcorn Recipe-Simple and Quick

I don't know about you, but I L-O-V-E Caramel Popcorn.  Its gooey, its delicious, plus popcorn is healthy for you. Right?!?  Today, I am going to share with you my family's secret recipe for The Yummiest Caramel Popcorn Around!





Straight from the Super Secret Family Recipe Book:



Microwave Caramel Popcorn:
2 C Brown Sugar
1 Cube Butter (1/2 cup)
2/3 C Condensed Milk (I always just use the whole can.  I never measure it)
1/2 C Karo Syrup
Pinch of Salt

Mix those ingredients in a microwave safe bowl.  Cook in microwave for 5 minutes.  Stir.  Then add 1 TSP vanilla extract, cook for another 5 minutes in the microwave.

Pour over a large bowl of popcorn.  I normally do 3 batches of air popped popcorn.  If you want it extra gooey, then do 2 batches.

4th of July Sugar Cookie Bars Recipe

For the 4th of July I made this cute little 4th of July Sugar Cookie Bars. They were a huge hit at the 2 different BBQ's that we took it (PS I didn't take the same pan to both places ;)


4th of July Sugar Cookie Bars
Ingredients: 
1/2cup unsalted butter
1 cup sugar
2 large eggs
1 teaspoon vanilla
2 1/2 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking powder

 Cream layer:
1 8 oz bar of cream cheese softened
1 cup powdered sugar
1 teaspoon vanilla
1 Large Tub of Frozen Whip Topping or 1 pint of Heavy Whipping Cream Whipped
1 lb of fresh Strawberries
1 pint of fresh blueberries

Cream butter, sugar, and eggs. Mix in vanilla. with salt and baking powder.  Then slowly add in the flour until the dough separates from the edge of your bowl (I like to use my +NutriMill Bosch Mixers , but doing it in a regular bowl or in a +KitchenAid will also work great)
  
Press the dough in a cookie sheet (like the one pictured).  You might want to spray your hands (and wash them as my mom would STILL remind me.  lol) with some non-stick butter type spray (I like +PAM Cooking Spray personally)
Bake at 375 degrees for 10 minutes or until done.

For the topping: mix the cream cheese, powedered sugar, and vanilla in a bowl, beating until smooth.  Then fold in your whipped cream/whipped topping.  

Spread that over the top of your cooled down bars.  Refrigerate if you won't be using immediately.   Then right before you serve the bars place your fruit in whatever design you desire (I did the American Flag)  

Quick note: I like more topping than bars when I make this recipe, if you think you would like more cookie and less topping ratio then double the bar recipe.

Best Elk Steak Marinade Ever

My husband loves to hunt.  Elk mostly.  This is the best marinade that I have come up with for our Elk Steaks.  It makes the elk nice and tender, and covers up most of the gamey flavor. 
When my husband brings home an elk, most of the elk gets ground up into hamburger (with some bacon instead of cow fat...yummm!)  But we still have lots of Elk Steak. (amazon links below on recipe)

So here is the marinade recipe (and really I just squirt the condiment into the pan or bowl that I am marinading the steak in and eyeball it):
1/4 c ketchup
1/4 c bbq sauce
1Tbsp mustard (I used spicy this time, but you can use whatever kind you want :)
2 Tbsp Worcestershire sauce
1 tsp liquid smoke
1 tsp garlic salt (or 2 chopped garlic cloves)
1 tsp onion salt (or 1/2 of medium onion)
1 Tbsp A1 Cracked Peppercorn Dry Rub (if you don't have this I would just use pepper)



 
Stir all the ingredients (without the steak) together in your marinade bowl.

Then take your steaks and put them in your marinade.

Now this is the part that really makes the steak yummy and tender: Poke the crap out of each steak with a fork. Make sure that each steak is evenly coated in the marinade. 

The more you poke the steak the more flavor/tender the steak.

 

After letting your steak sit for awhile (at least 2 hours, but 24 hours would be even better), grill it to your desired doneness. 

PS.  A little tip someone told me when my husband first started to hunt...Onions take out the gamey flavor.

Best Homemade Pizza Dough Recipe EVER!

Pizza is one of my family's all time favorite foods, but we live far enough from town that no delivery boy is gonna show up at my door!  Nor will I be quickly picking up pizza from the store 2 blocks down. 
So after many years of working on getting a decent pizza recipe this is the one that is my family's favorite!

This pizza's toppings: 
ranch dressing (instead of tomato sauce)
canadian bacon
pepperoni
olives
cheddar cheese
mozzarella cheese

I personally like to use my Bosch when I make bread dough, cause its quick and easy!  Plus, I wouldn't know how to without it!





Pizza Dough Recipe:
2 cups Warm Water
2 Tbsp Quick Rise Yeast
1 Tbsp Sugar (or honey if you prefer)
2 Tbsp Oil
5 Cups Flour (you might need more or less depending on the age of your flour and your humidity)

Put the yeast and sugar in your warm water.  Let the yeast grow a little bit.  Then combine it with your oil and flour.  I start out with putting 3 cups of flour with the liquid mixture in my mixer and then slowly adding more flour until the mixer cleans off the sides and bottom of the bowl like in the picture. 

Let dough rise until its about doubled in size.

This recipe makes 2 cookie sheet pans of thinner crust pizza.  I will sometimes make my crust thicker and make only 1 pan of pizza and then do a smaller pan of cinnamon roll pizza for dessert.   (for the cinnamon roll desert pizza I sprinkle on brown sugar,  cinnamon, and sometimes chocolate chips, then top with frosting when it is still warm and just removed from the oven)

Bake at 425 for 15-20 minutes.  I always put the cheese on in the last couple minutes of baking.

 My 4 year old daughter begged my husband and I, to let her make SOMETHING.  I finally relented and gave her a cookbook with lots of pictures in it to entertain her while we finished getting dinner ready.  After telling her for the upteenth time that we didn't have the right ingredients for whatever she was wanting to do, she settled on making pudding.
 Of course, she had no idea that we weren't making the REAL kind of pudding.  It was the good ol' J-E-L-L-O kind.  But she was happy anyways.

She felt so very accomplished, that she could pour the milk into the bowl with the powder.  Then stir til her heart was content (then let mom stir til it was really done).

I would say Disaster Averted with our Drama Queen.  It was a "Say Yes" kinda day, but with a little diversion too.

My Favorite Way to Eat a Turkey for Thanksgiving



You all know how much I love to cook!  Right?  A couple of years ago I heard of soaking your turkey in kosher salt for 12-24 hours before cooking it.  So I decided to try it.

I made sure the turkey was nice and thawed out.  Then I pulled out all that inside stuff and threw it away (a sin I know, but it really grosses me out).  Then I rinsed the turkey off.

Then I got out my largest pot and the stuffed the turkey in there and rubbed kosher salt all over that turkey.  I put it inside, outside, everywhere I could get salt.  Then I covered the turkey in water (as much as I could).

Now put the turkey in the fridge for 12-24 hours.  Since my turkey was not totally covered in the water I flipped it over halfway through.

The salt will make the water absorb into the turkey so you will have a super moist turkey.  It is SOOO good.

Then when I was ready to cook the turkey I added a couple of chopped up onions, celery, garlic, and apples to the bag.  Put the breast side down for cooking.  Then I cooked it for the appropriate amount of time (I think I found that on the cooking bag instructions or the turkey I really don't remember).  Then when there is an hour left I flipped the turkey over so the breast was up.  This is really difficult because everything is super hot and the juice from the bag is going to splash all over.  It is worth the effort though.  Trust me :)

I won't be making the turkey this year cause we are going to Grandmas house instead.  But I am going to go buy a turkey if the weather will let me and then sometime in the next few months I am going to cook me a super good turkey


Strawberry French Toast with Coconut Syrup

If you haven't noticed lately, but I am a little obsessed with flavor bread for french toast.  Its one of my family's favorite breakfast.  Especially if it includes whipping cream and fresh fruit.

So today, we tried a bread from Franz called Strawberry Shortcake.  It smelled DI-VINE!  Of course me and my cheap wallet got the bread at the Franz day old bread store.  I did look in our local Fred Meyer and they had the bread too, it was $1 more, but they had it.





Recipe :
1 loaf of Strawberry flavored bread (I personally prefer to use bread that has yeast, it seems to hold together better)
5 eggs
1/2 c almond milk (or regular milk)
1 tsp vanilla extract
Fresh Strawberries
Coconut Syrup (Go HERE for the recipe)
Whipping Cream (from a can or the real stuff)

1. Mix the eggs, milk, and vanilla together.  Beat the eggs really well.
2. Dip each bread slice into your mixture.  Make sure to coat each side well, then place on a griddle.
3. Cook on both sides until light brown
4.  Serve french toast warm with fresh cut strawberries, syrup and whipping cream
